Fresh Pineapple? Eat it and grow it!

Until recently, the thought of preparing a fresh pineapple filled me with dread.  However, I can now  prep with ease (see video below).   This fruit is so delicious: why didn't I try sooner?!!

The recipes below are easy ways to feed your family their five-a-day, without them noticing...

Exotic Fruit Salad

  • Half a fresh pineapple
  • Handful of grapes
  • 2 kiwi fruit
  • Handful of Strawberries
  • 1 cup of fresh orange juice
Bananas, apples and oranges are also delicious in fruit salad. I always keep a tin of peaches in for emergencies, which is useful if you haven't got all the fresh fruit you need. Pop everything in a bowl and add a cup of juice. Tropical or apple juice works if you have no orange.

Serve with vanilla ice-cream, creme-fraiche or cream if you prefer.

Fruit Skewers

These are great fun for big and small kids to make themselves!

  • 1 bar of milk chocolate
  • Wooden skewers
  • Mix of prepared fresh fruit
All you need is fresh fruit. Choose a variety of fruit and chop them up into large chunks. Fresh pineapple, kiwi, grapes, strawberries and banana are perfect, as they stay on the skewer.   Put the fruit on the skewers. Pop them on a large plate and set aside.

Break the chocolate into pieces and put into a small bowl.  Heat the bowl gently over a pan of water and when the chocolate has melted, you can drizzle the chocolate over your fruit.

Eat and enjoy!

Grow your Pineapple!

Did you know that you can twist off the top of a pineapple and grow it? Before you cut the pineapple up, grab hold of the leafy top and twist hard until the top comes cleanly off.  Pull off  the outer leaves until you see the roots growing through, like nodules from the sides. The leaves peel off quite easily.

Pop skewers into the side of the pineapple top to prevent it from falling in the water and rotting. Balance it over a glass or a little pot for it, like my cut-off juice bottle! Fill it up with water so the base sits in the water.  Keep changing the water regularly every couple of days and when the roots grow, pot it on...
