Devonshire Apple Pudding

This is a traditional, British dessert.  The Normans introduced apple trees to Britain and the rest is history!  My recipe comes from A Cook's Tour of Britain, written by the WI and Michael Smith in 1984. This book explores the amazing variety of regional cookery that exists across Britain.  It is peppered with anecdotes and history, making it a delight to read.


Serves 4-5

Ingredients
1.5 lb/700g apples
Sugar to sweeten apples if needed
40z/110g breadcrumbs
oz/75g butter or margarine
40z/110g sugar
3oz/75g ground almonds
1 beaten egg

Method
Put the oven on 325F, Gas Mark 3 or 160 Degrees C.
Grease a 1 litre oven-proof dish.
Peel, core and slice the apples.  Cook gently in a little water and sweeten to taste.
Mix with breadcrumbs and place in the pie dish.
Cream the butter and sugar until light and fluffy; beat in the egg and stir in the ground almonds.
Pour over the apples and bake for 45-60 minutes, until golden and firm to the touch.

This was a big hit with my family: they do like a good pud!
Serve with custard, cream or ice-cream and enjoy :)
