Mum's Sticky Flapjacks!

This is a recipe I have grown up with and it is absolutely delicious!  It reminds me of family teas, made by my Mum and fighting for the last piece with my brothers...


Ingredients
100g/4oz demerara sugar
100g/4oz butter or margerine
3tbsp Golden Syrup
175g/6oz porridge oats
50g/2oz dessicated coconut
1tsp salt
1 beaten egg

Method

  • Heat butter, sugar and syrup in a pan, until melted.
  • Remove from heat and stir in the dry ingredients.
  • Pour mixture into a shallow, greased, lined tin (20cm/8" tin) and level the mixture.
  • Cook in the oven for 20-30 munutes, until golden and firm to the touch.
  • Remove from the oven. After 5 minutes, mark into squares. When almost cool, loosen and lift each square from the tin. If they crumble, squash them together and they firm up as they cool...
