Blackberry Gratin

This recipe is a great way to use up left-over marzipan or a glut of blackberries! It has a subtle almond taste and the blackberries and marzipan go together surprisingly well.


Ingredients
1lb washed blackberries
2oz brown sugar (but white will do
1tsp cinnamon
4oz marzipan
4oz cream cheese
3 eggs

Method
  • Heat oven to 200C/ Gas Mark 6
  • Grease a flat oven-proof dish (mine below is 21cm x21cm) and add the blackberries. 
  • Sprinkle the sugar and cinnamon evenly on top.
  • Chop the marzipan and put in a mixing bowl, with the cream cheese and beat.  
  • Add the eggs and beat until smooth.
  • Put into the oven and cook for 30-40 minutes until cooked and brown on top.
  • Remove and cool.

Serve hot or cold with cream or ice-cream...
